AUTHENTIC NONYA NASI LEMAK

Traditionally a breakfast meal, nasi lemak often served in a banana leaf wrapping, becomes so well-loved that there are many restaurants in Singapore which specialise in serving nasi lemak for late dinners, suppers and brunch! Nasi' means rice in Malay, while 'lemak' means rich. The rice, with its distinct aroma, is served piping hot with a variety of condiments including fried peanuts, cucumber slices, crispy fried ikan bilis and the all-important sambal.

Good nasi lemak should be soft, sweet fragrant and fluffy, and the rice grains must not stick to one another.
