You will work in pairs and be involved in the food preparation as well as washing of utensils.

Honey Baked Ham with home-made sauce - Well if you are in for baked ham, this one is a really good one. You will learn the technique to enhance the taste of the ham, scoring the ham and how to make the serving sauce. You will never want to buy a commercial one after this. Liquor will be used. (please refer to photo of our students’ work)

Christmas Suji Cake – Have this wonderful suji cake with a twist from the original suji cake this Christmas. This cake will be decorated to suit the Christmas festive.

They are just so irresistible, rich and indulgent treat for all in the family and friends. They would elicit wows when you present them dramatically towards the end of the meal.

Buche de Noel (Log Cake) (Photo attached)
Each student will work on a 35cm log cake
- Learn the craft of making the laughing log cake (no mould is required)
- Decoration of your own log cake with belgium chocolate
- How to make log cake moist
- How to keep log cake fresh

German Style Light Fruit Cake with Cointreau Syrup
- Learn how to keep fruit cake moist
- Learn the secret of keeping the cake for at least 6 months
- Learn how to prepare the cointreau syrup

Otak-otak, perhaps is definitely another popular snack amongst Singaporeans. Otak-Otak is made from Fish Paste, mixed with a variety of spice and then wrap in coconut or banana leaves before sending to grill or steam.

You will learn this special delectable peranakan style delicacies which you can prepare in your home kitchen that will tantalise taste buds with the richness of spices.

Traditional Hainanese-Style Western Cakes Making

My Mother-in-law used to say that with the ageing of older chefs, many traditional and delicious bakeries will be extinct soon. I would not deny this. My mother in law is an excellent cook and baker. She inherited her culinary skills from her grandparents who had once worked in the kitchen of the colonial expats family. Over the years, they had mastered the English teatime delights. Imparting these valuable skills to their younger generations, many of the latter became owners of traditional kopi-tiam selling rich butter cakes, char siew buns, old-style vanilla buttercream cake, puffs, tarts etc on top of the Hainanese cuisine.

Rekindle fond memories of these traditional bakeries in this workshop.
